Desde la prehistoria la miel ya era utilizada como alimento.
Los egipcios la usaban como alimento en forma de condimento azucarado, también se usaba como ingrediente en el proceso de embalsamamiento. En Grecia la recetaban como parte necesaria en la dieta, los atletas la tomaban con agua para contrarrestar la fatiga. En Roma se servía con vino, siendo tan apreciada que llegó a ser exigida como tributo a los enemigos derrotados. En América este néctar se utilizó como tratamiento contra las enfermedades infecciosas.
La miel mantequilla se obtiene por un proceso controlado para que su consistencia sea suave “de mantequilla”. Es tratada a través de filtros especiales para eliminar todas las impurezas y para disminuir el tamaño del cristal, a través de un proceso denominado cristalización rápida. El proceso dura de 3 a 4 días y en él intervienen también lapsos de agitación y reposo. En todo el proceso se controla la temperatura a fin de evitar la descomposición o pérdida nutricional de la miel.
Usos:
- Como edulcorante, solo o en la fabricación de alimentos.
- Vehículo para disimular el sabor de medicamentos amargos.
- Ingrediente activo en algunas formulaciones cosméticas.

- Facilita la digestión y la asimilación de otros alimentos.
- Mejora la conservación de los alimentos.
- Posee propiedades sedantes.
- Es antihemorrágica, antianémica, antiséptica, antitóxica, emoliente y febrífuga.
- Mejora el rendimiento físico y sexual.
- Estimula la formación de glóbulos rojos.
- Es utilizada para el tratamiento de gripes faringitis, laringitis y rinitis.
- Su consumo regular es beneficioso para el corazón.
